This is unreal, an organic Pinot, Le Domaine de Garabaud la Salsous from Limoux, an appellation in the South of France that is being spoken about more and more in the same breath as Burgundy. This is an explosive Pinot, deeper colour than usual, lush fruit. Rustic with good length - initially it is difficult to even pick as Pinot! Usually the advice with Pinot is do not decant! let it evolve in the glass! In this case I'd recommend a decant (even a hyper decant like Connor Roy in Succession!) to get it out and proud. Crack this wine and splash around liberally - perfect for lamb & Easter.
